Do you have an herb garden? I recently got my hands on some fresh lavender (I’m a first timer playing around with lavender). So I decided to get the creative juices flowing to find a unique way to eat lavender.

Since Mother’s Day is approaching, I know many people celebrate by going out to brunch or showering mom with plants and flowers for a Mother’s Day gift.

That’s when it clicked, lavender pancakes are perfect to enjoy around Mother’s Day and they are actually healthy for you!

This recipe is low-carb, grain free and high in fat. The lavender gives these pancakes a delectable flavor, but it is totally optional. These pancakes are still delicious with or without the lavender. Just give it a try and you will see…

3 eggs
3 tbsp. coconut flour
2 tbsp. ground flax seed (optional)
1.5 tsp. maple extract (optional – or substitute it for another form a sugar)
1 tsp. of fresh lavender buds
1/4 cup coconut oil
3 tsp. butter or ghee
1. Beat eggs, coconut flour, flax seed and maple extract until smooth, thick and creamy.
2. Place coconut oil in wide pan and heat on medium heat until hot.
3. Pick off fresh buds from a lavender plant and sprinkle into batter and mix.
4. Pour batter into hot oil and cook about 1-2 minutes per side or until pancakes are golden brown.
5. Cover pancakes in butter and enjoy!
