Finding Keto recipes with the right combination of healthy fats, protein and net carbs can be tough. Look no further. This tasty twist to an old classic and is almost completely sugar free (minus the <1 g of sugar from the mayo & tomatoes) and has the Keto macro ratios that you are striving for. Plus, it’s soooo tasty!

Salad Ingredients:
3 cups of lettuce (1.5 per person, recipe serves 2 people)
Pinch of red onion
1/2 cup sour kraut
1/2 lb. corned beef
4 tbsp. coconut oil
Sugar-free Thousand Island Dressing Ingredients:
1/2 cup chopped tomatoes
1/4 cup apple cider vinegar
1/4 tsp. salt
1/2 cup mayo
1 tsp. Worcestershire
2 tbsp. chopped onion
1 tsp. minced garlic
1. Place tomatoes, salt and apple cider vinegar in small pot and cook covered on medium-high heat for 10 minutes or until it starts to thicken slightly.
2. Pour tomato mixture into a blender or food processor. Add garlic, onion, Worcestershire sauce and mayo. Mix until it becomes creamy. Set aside or place in fridge to help it thicken up again quickly.
3. Place coconut oil, corned beef in pan on medium heat. Then add sour kraut into pan and cook until hot.
4. Place half of all ingredients salad on a serving plate. Including half of corned beef mixture and dressing. Enjoy!
